- Heat ghee in a pan. Add cumin seeds, green chilli, and grated ginger.
- Add boiled potato cubes and roasted peanuts.
- Toss in the noodles. Season with sendha namak (rock salt) and black pepper.
- Garnish with coriander. Serve hot.
Amaranth Noodles with Yoghurt Sauce
- Boil amaranth noodles for 6 minutes. Cool slightly.
- Mix with fresh yoghurt, cucumber, mint, and sendha namak.
- Serve chilled or at room temperature.
