✦ Japan's most celebrated noodle. Served hot in winter, cold in summer. Now in your kitchen.

WHAT IS IT?
Soba noodles follow the traditional Japanese recipe — a blend of buckwheat flour and wheat flour. Unlike our 100% buckwheat fasting noodles, soba uses wheat as a structural binder, which is what gives authentic soba its characteristic texture and slight chew. They are higher in protein than conventional white noodles due to the buckwheat content, and have a distinctive earthy, nutty flavour that is unmistakeable. Note: these contain wheat and are NOT gluten-free.

KEY INGREDIENTS
• Buckwheat Flour — primary flavour and nutrition source; rutin, plant protein
• Wheat Flour — traditional Japanese binder for authentic soba texture
• Salt
⚠ Contains wheat — NOT suitable for gluten-free or fasting (kuttu) diets

WHY YOU'LL LOVE IT
• Authentic Japanese recipe — not a health-food approximation
• Rich earthy buckwheat flavour — unmistakeable and satisfying
• Excellent cold (zaru soba) or hot in broth — two completely different experiences from one noodle
• Higher protein than white flour noodles
• Beautiful to present — dark, elegant noodles with any Asian-inspired topping
• Great for home Japanese cooking without complicated ingredients

HEALTH BENEFITS
• Rutin Antioxidant — buckwheat's signature compound; strengthens blood vessel walls and reduces inflammation
• Higher Protein — buckwheat raises the protein content significantly above plain wheat noodles
• Manganese — supports bone health and metabolism
• B Vitamins — energy metabolism
• Fibre from Buckwheat — digestive support

HOW TO USE
ZARU SOBA (Cold — The Classic Japanese Summer Dish):
1. Cook noodles 4–5 minutes. Drain. Plunge into ice-cold water immediately.
2. Drain again thoroughly.
3. Serve on a plate or bamboo mat.
4. Dip each bite into tsuyu dipping sauce (mix: 1 part soy sauce, 1 part mirin, 2 parts dashi or vegetable broth).
5. Garnish with grated daikon, spring onion, wasabi, and toasted nori.
